Lunch:

  • Sausage Sandwiches w/ Potato Chips
  • Garden Salad with Pulled Chicken – Place split chicken breasts in crock pot with 1 cup water and cook ahead of time to made lunchtime prep time easy and fast.
  • Homemade Pizza – This makes great leftovers to eat the next day!

Dinner:

  • Pork Spareribs w/ Roasted Red Potatoes – Rinse spareribs and pat dry. Place spareribs in crockpot with 1 cup water and 1 cup BBQ sauce. Cook on high 2 – 3 hours, then low 6 – 8 hours. For potatoes: Cut potatoes into quarters and toss with 2 TBS olive oil, 1/2 tsp salt, and 1 tsp oregano. Cook on stovetop pan on medium low heat for 30 minutes or until potatoes are fork tender.
  • Hamburgers w/ Sweet Corn
  • Grilled Stuffed Onions w/ Garden Salad – Remove 1 lb. sausage from casing. Brown on stovetop pan until fully cooked. Drain and place back in pan, and mix with 1 cup bread crumbs (or 4 slices of bread, toasted and cubed), 2/3 cup water, 1 TBS garlic powder, 1/2 tsp salt and 1/4 tsp pepper. Rinse onions, but keep skins on. Hollow out onion, leaving about 3 to 4 layers on the outside (save onion that you pull out for other recipes!!). Stuff sausage and bread mixture into onion. Wrap onions loosely in foil . Grill for one hour or until onions are tender. Serve with garden salad.
  • Grilled Shrimp w/ Sweet Corn – Soak shrimp (already on skewers) for 20 minutes, so skewers are safe to grill. Remove shrimp and pat dry. Sprinkle with salt, pepper, sugar, garlic powder and a little bit of red pepper. Place shrimp skewers on grill and cook until shrimp are bright pink and fully cooked. Serve with grilled sweet corn.
  • Italian Sausage Caccitore – Slice sausage into 1/4 inch coins (cut on a slight angle) and heat over medium heat in stovetop pan with 2 TBS oil. When browned, add half of one onion (cut into 1 inch pieces) and diced bell pepper (deseeded and decored) to pan – cook until tender. Add jar of pasta sauce and simmer 5 minutes. Serve over cooked pasta.
  • 4th of July Feast: BBQ Chicken Wings and Thighs w/ Potato Chips, Coleslaw and Watermelon – Rinse thighs and wings and pat dry – leave skin on for juicy meat! Place on grill and brush with BBQ sauce. Lower cover and cook 8 to 10 minutes over medium heat. Flip chicken pieces and brush with BBQ sauce again. Lower cover and cook another 8 minutes, or until chicken is fully cooked. For coleslaw, use my homemade recipe.
  • This leaves you one night of leftovers or eating elsewhere with family and friends.

Snacks:

  • Potato Chips
  • Popcorn
  • Fruit (lots of it!)

Total Spent: $98.14 (before taxes)
$3.51 per person/per day (based on a family of four)
