This week’s Publix Meal Planner was a little more difficult for me to put together.
The biggest problem I had in planning meals was that meat prices (even on sale) are quite high this week. I could find nothing lower than $2.99 per pound, with most meats $3.49 to $3.99 per pound. (My target price for meat is $1.99 a pound, although $2.49 isn’t that bad.) It is definitely one of those weeks where defrosting any frozen meat from a freezer stockpile is a good idea.
That being said, I made my goal of planning a week’s worth of meals for under $100 – and finished at $98.95.

WHAT TO MAKE
Breakfast:

- Eggs and Bacon
- Cereal w/ Milk
Lunch:
- Tuna Salad Sandwiches w/ Chips – Mix tuna with mayo and season, as desired. Serve on french hamburger buns with chips.
- French Bread Pizza w/ Garden Salad
- Roast Beef Sandwiches (on Sourdough) w/ Macaroni Salad
Dinner:
- Roast w/ Potatoes and Carrots – Rinse roast and pat dry. Place in crock pot and add 1 cup water, along with a sprinkle of 1/4 tsp. salt and a couple grinds of pepper. Place potatoes on top of roast, then add carrots. Cook on high 6 – 8 hours. (Note: Vegetables can be put in halfway through cooking time, if preferred. I find it easier to put everything in at once and forget about it….)
- Franks and Beans – Serve hot dogs with baked beans. Crumble 1 – 2 crispy slices of bacon into baked beans for added flavor.
- Hamburgers w/ Chips
- Pasta w/ Meat Sauce – Simple but delicious! Brown 1 lb. ground beef and drain. Add to a jar of spaghetti sauce and simmer for 15 minutes. Serve over pasta.
- BLT Sandwiches and Soup - For a new twist on your BLT, make sandwich with lightly toasted sourdough bread slices. Serve with soup.
- Chicken Tenders w/ Steamed Broccoli and Carrots – If you look at the sales ad, you’ll see where I got my inspiration from…. Marinate chicken in 1/4 cup water, 2 TBS oil, 2 TBS vinegar and 1/4 tsp each oregano, garlic powder, salt and pepper. Discard marinade and bake, broil, or grill chicken until fully cooked. Serve with steamed broccoli and carrots.
- This leaves you one night of leftovers or eating elsewhere with family and friends.
Snacks:
- Fruit and Vegetables
- Cookies
- Chex Mix
Total Spent: $98.95 (before taxes)
$3.53 per person/per day (based on a family of four)
