WHAT TO MAKE

Breakfast:

  • Cereal w/ Milk
  • Egg ‘n Muffins – Place scrambled or sunny-side up eggs in between english muffin halves.
  • Bagels w/ Cream Cheese and Fruit

Lunch:

  • Hoagies w/ Pretzel Crisps Made with leftover chicken from dinner
  • Chicken Nuggets w/ Potato Chips
  • Soup w/ Hummus on Baguette Slices

Dinner:

  • Slow-Cooked Chicken w/ Vegetables – Place chicken quarters in large Crock Pot. Pour in one bottle of italian dressing and half a carton of chicken broth. Cook on high 6 – 8 hours or until chicken is cooked and falls off the bone. Use leftover chicken in future dinners. Serve with steamed broccoli or baked potato.
  • Stuffed Red Bell Peppers – Cut hole around stem of pepper to remove stem and seeds inside – rinse. Boil peppers for three minutes until soft. Remove from water and drain in colander. To make stuffing: Brown 1 lb ground beef, then drain. Add 1 can black beans (drained and rinsed), 1 can diced tomatoes (drained) and 1 cup cooked rice. Stir in 1/4 cup water along with 1 tsp. oregano, 1 tsp. garlic powder, 1/2 tsp paprika, 1/4 tsp. salt and 1/4 tsp. ground pepper.  Simmer for a few minutes, then carefully spoon into red peppers. Top each pepper with a sprinkle of bread crumbs. Stand peppers upright in baking dish and bake at 350 degrees for 30 – 40 minutes or until thoroughly cooked.
  • Italian Bean Soup – In stovetop dutch oven, heat 2 TBS olive oil on medium heat. Add diced onion (half an onion) over medium heat until onion is softened. Add 1 1/2 cups pre-cooked chicken, 1 can Cannellini beans (drained and rinsed) and 1 can tomatoes (drained). Add 1 – 2 cups chicken broth, then season with oregano, basil, garlic powder (I like spices so I use about 1 TBS each, but that may be too much for some.) and salt and pepper.
  • Black Beans and Rice with Chicken - Super simple and super tasty! Cook 1/4 cup chopped onion in stovetop pan, until onion is soft. Add 1 can of black beans (drained and rinsed), 1 can of tomatoes (drained) and 1 cup chicken broth. Season with 1 tsp garlic powder, 1 1/2 tsp cumin, 1/2 tsp paprika and salt and pepper, to taste. Simmer, then serve over rice.
  • Sauteed Zucchini and Chicken over Pasta – Heat 2 TBS olive oil in stove top pan over medium heat. Add 1/2 cup chopped onion and cook until soft. Add thinly sliced zucchini and chicken (breasts cut into 1 inch cubes). Stir fry vegetables and chicken for 5 – 7 minutes or until chicken is fully cooked. Sprinkle with salt and serve over cooked pasta.
  • Shrimp Lemon Pepper Linguine – I have never tried this before, but it looked yummy!!
  • This leaves you one night of leftovers or eating elsewhere with family or friends.
