Publix Meal Planner: February 24 – March 2, 2010

You’ll notice this week that I have included two dinner recipes for cooking with a whole chicken. With the price of the birds at $1.19 a pound, that’s a good deal. (Plus, other meats seem to be priced quite high this week.)

Red bell peppers are also on sale this week at a great price – $1.97 a pound. I had a recipe for Stuffed Red Peppers on last week’s Publix Meal Planner – if it’s a recipe your family enjoys, you could make them this week for under $6 a dinner, using what’s on sale this week.

WHAT TO BUY

Grocery:

  • 2 Purdue Whole Chickens (4 lbs. each) – $1.19 a pound
  • Publix Italian Turkey Sausage (2 lbs.) – $2.99 a pound

Deli:

  • Boar’s Head Honey Maple Turkey (1 lb.) – $8.49 a pound
  • Italian Bread – $1.99
  • Hoagie Rolls – around $2.49
  • Wedge of Parmesan Cheese – usually $4
  • Pizza Dough – $1.49 – Usually found in refrigerated case – if not, you’ll need to ask for one

WHAT TO MAKE

Breakfast:

  • Bagels w/ Cream Cheese
  • Yogurt w/ Strawberries
  • Waffles
  • Omelets w/ Cheese

Lunch:

  • Maple Honey Turkey Sandwiches w/ Toasted Chips
  • Pizza Bagels – Spread tomato sauce over bagel halves, then top with cheese (and diced tomato, red pepper, or onion, as desired). Heat in 400 degree oven until cheese is melted.
  • Spinach Salad w/ Chicken, Cheese, Tomatoes and Red Bell Pepper

Dinner:

  • Homemade Pizza – Set dough out in dry, warm spot to let rise until it doubles in size. Roll dough out  to desired shape on lightly-floured surface. Sprinkle garlic powder on dough, then top with tomato sauce, cheese, and sliced red peppers and tomatoes. Bake in 400 degree oven 15 minutes or until cheese is melted and crust is crispy. Let set for 5 minutes before cutting.
  • Sausage Sandwiches w/ Peppers and Onions – Brown sausage in stove top pan over medium high heat (you may need to add a little oil to the pan if they start to stick). Turn heat to medium low and add 1 red bell pepper (cleaned and cut into thin strips) and one onion (cut into thin strips).
  • Roasted Citrus Chicken w/ Vegetables – Rinse chicken (inside and out) and pat dry. Sprinkle inside of chicken with 1 tsp salt and 1 tsp garlic powder. Cut orange into quarters and stuff inside chicken. Sprinkle outside of chicken with salt and pepper. Place in roasting pan and roast in 400 degree oven for 1 hour 15 minutes or until fully cooked. Serve with steamed vegetables. Save leftover chicken for lunch.
  • Pasta w/ Red Peppers, Onion and Garlic - Heat 2 TBS olive oil in stovetop pan over medium heat. When hot, add half an onion (diced) along with one red pepper (cleaned and sliced in small strips). Cook 2 – 3 minutes until softened. Add minced garlic to pan and cook 2 minutes more. Then add one can of tomatoes (drained), 1 tsp oregano, 1 tsp basil and 1/2 tsp salt to pan and simmer 5 minutes. Serve over cooked pasta and sprinkle with grated parmesan cheese.
  • Savory Crockpot Chicken - Mmmmm….. I found this recipe online and I think I’m going to have to try it this week.
  • Shrimp Scampi Over Pasta – Cook frozen shrimp according to directions on package and serve over cooked pasta. Top with grated parmesan cheese.
  • This leaves you one night of leftovers or eating elsewhere with family and friends.

Snacks:

  • Cheetos
  • Nabisco Toasted Chips
  • Yogurt
  • Fruit

Total Spent: $89.02 (before taxes)

$3.18 per person/per day (based on a family of four)

    If your family loves homemade pizza, you can buy a case of 20 frozen pizza dough balls at Sam’s for about $16. This will make your pizza dough only $.80/dough – a savings of $.69/each over the Publix dough. A savings of $13.80 for the 20 pizzas you would make. I’ve had the Publix dough and prefer the Sam’s better. It also makes a bigger pizza.:)
